4 things I've seen or done this week
I don't know how my weekdays would be if I didn't set aside time and prepare most, if not all, of my meals for the week. I made these muffins last Sunday.
They were so good, I thought I'd share what you need so you can make some too.
1 cup almond flour
¾ cup oatmeal
½ tsp baking soda 1 tsp baking powder ½ tsp cinnamon A pinch of salt 1 egg ¾ cup of plain Greek yogurt ¼ cup and 2 tbs honey 2 tbsp granulated Monk fruit ¼ cup almond milk (I used unsweetened) 1 ½ tsp vanilla extract ¾ cup of blueberries (fold these in your batter do not stir or they will bleed) Bake in a muffin pan at 350F for about 20 min
I finally finished Greenleaf. That was a well written series. If you haven't watched it, you should.
I did an assessment on how close I am to reaching my goals for this year. The last quarter of 2020 is here, and honestly, this year looks nothing like I thought it would when it began. (I am sure you can attest to that too. But, I did a check on where I am and where I want to be by the end of the year. Some of the goals are for personal growth, some are spiritual, and some are financial. It was a great way for me to check myself and remind me to KEEEP GOING, despite anything that may come my way.
I started watching Social Dilemma on Netflix. It's pretty interesting. I only watched half of it, and if I get a chance, I'll finish it this weekend.
