My Friday 4-1-1
4 things I've seen or done this week:
I decided to fill a blank wall in my hallway. After spending lots of time on Pinterest, Instagram, and watching HGTV it's tough for me not to go out and buy everything I see. I got some photos printed in black and white and here's what I did with them. I am now trying to figure out what my next project will be.
2. I started reading the novel Little Fires Everywhere after listening to Brene' Brown's Unlocking Us podcast with the author Celeste Ng. If you are a fiction writer, like me, I would suggest you listen to it. It was really good. I'm in chapter 2 of the book and it is great so far. There's a series on Hulu with Reese Witherspoon and Kerry Washington and Reese Witherspoon, so if I like the book, you will soon see me writing about watching that too.
3. Did you know almonds are a great source of melatonin and magnesium so eating a few before bed helps you sleep better?
ME neither. I have a tough time sleeping sometimes so I read up on some things to help me out. So, I did a cup of sleepy time tea and ate a handful of almonds about 45 min before I went to bed, AND I SLEPT ALL NIGHT. I did this for about two nights this week and it worked. If you try this let me know how it works for you.
4. I made these muffins Monday with the apple pulp from some apples I juiced.
As promised, when I posted them on my Instagram feed, here is the recipe:
About one cup apple pulp (I left the skin on)
One cup almond flour
One cup almond flour
1/4 cup coconut sugar
1 1/2 tsp baking powder
1 tsp cinnamon
1 cup Greek yogurt
1/4 cup almond flour
1/2 cup oats
1/4 cup flax seeds
1 tsp vanilla extract
I also had extra walnuts, so I threw them in as well (I didn't measure them)
Preheat oven to 350F
Mix all ingredients together
Spoon mixture into a greased muffin tin or into cup cake liners. I used these silicon ones so I can use them over and over.
Bake for about 20-25 or until you can insert a toothpick in the center and it comes out clean.
Serve warm or cooled.
